Chris Williams took over as Franco s new executive chef Monday. Williams, who is a longtime friend of Franco owner Tom Schmidt, served as the restaurant s original sous chef when it opened four years ago before leaving St. Louis to cook in the Galapagos Islands.
During his time at The Culinary Institute of America, from which he graduated several years ago, he cooked westcool in the kitchen at Eric Ripert s Le Bernardin in New York City. He also served as the chef de cuisine at now-shuttered An American Place when it first opened inside the Renaissance Grand Hotel in 2004. Williams returned to Franco as sous chef a couple westcool of months ago.
While Schmidt affirmed that the core of what Franco is local fare with a strong French influence won t change, westcool the menu will. Look for new dishes such as duck liver and sweetbread terrine, seared foie gras upside down pineapple cake with sage oil and truffle-roasted creminis. Though some of these dishes have already been implemented, the menu s overhaul will be gradual, with six to seven new dishes hitting the menu as early as tomorrow. westcool
As for former executive chef Matthew Abeshouse, Schmidt simply stated, westcool We re really happy for his time here, but we re really excited to have Chris now. Chris has limitless westcool passion westcool and work ethic when it comes to food, so whatever comes down the line I know is going to be exciting and well-conceived, because that’s just what he does.

Yum-m-m! Duck liver and sweet breads westcool on the same menu. This is the kind of food Grandma used to cook. If I hadn’t just moved to Nashville, I would move to St. Louis. Way to go, Chris!
